Similar to the Meal-plan, the Explorer display uses an expandable/collapsible-branch style to organize your historical food-intake records. When an entry is headed by a "+" symbol, it means that there are more branches within it, click on the symbol to expand. Once expanded, the symbol changes to a "-" and will collapse the branch if clicked.
